During the process of making Ožemček cheese, the curd grain is additionally pressed in the cheese vats (this is also where the name of the cheese comes from, as ožemati in Slovenian means to press or to squeeze), which reflects in a thick, firm and hard texture. While Ožemček cheese ripens, its rind acquires an evenly orange-brown colour and a sweetish-piquant taste, which is complemented by a more distinctive aroma.
