Ricotta from Sheep's Milk

Ricotta is made from whey, hence it contains an ample amount of protein and only little fat. The taste is sweet due to the higher lactose content. The soft structure is compact enough for the cottage cheese to retain the shape of a loaf, but at the same time still so light that it can be mashed.
